Like excessiveforce said, lift some weights! Also maybe do some swimming to keep your cardio up. Maybe take the time to go through your notes (if you take them) and organize/re-write them.
Right now I'm laid up with a head-cold - I'll only miss a few classes, but I'm itching for some activity, going through my notes helps a bit - I visualize each move in my head step-by-step.
