True.

This is a demonstration video for teaching fundamental techniques, so the defender is static. I'm sure they have a defense-takedown video as well.

Can you imagine a boxing instruction video where the instructor teaches how to throw a jab at his assistant and the assistant slips inside and lands a smashing overhand right...lol.

Not good for teaching.
