In my gym in the UK i have the guys sparring most of the night(15-20 rnds) but not every session,however we spar in various ways ie,punch vs knee,kick vs punch,pressure fighter vs mover etc etc,plus we clinch only for 15mins.
The gyms ive trained in in Thailand that have only Thai boys training hardly spar at all,only clinch and sometimes boxing only.
The gyms ive seen in Thailand with a lot of foriegners training tended to have them sparring with each other for size etc.
Personally i belive we have to spar in the west much more often than they do in Thailand because we fight much less often.
