A real knife assault you won't see coming. An intelligent, armed attacker will simply stick you without any foreshadowing, and take what they need off of your body. An intelligent armed attacker whom you piss off will cut you before you can see them draw the blade. In both cases, you do your best to fight back...or you die on the floor.

If some kooky crazy goofball bastard is waving a knife around...he can still hurt you, and it's better to run or walk away if you can...if you can't walk away, of course you fight.

You HAVE to fight back. If you are breathing and conscious, you have to do your best to keep yourself breathing. You try not to get cut, you try your best to fend off the attack until you can get away or until you can diffuse the situation. You keep aware of your surroundings, try to use footwork to get your back to a door so you can flee...or you do the same to get to a weapon...

It is very unlikely to get into this type of situation anyway, and even more rare that both parties be armed...still I say it's always better to carry an un-needed weapon and have it than to need it and not have it.

As for who would come out on top. I will. Always. If I allow myself to even consider dying, then I've psychologically registered that as a possible outcome. Fear is good. It's very VERY HEALTHY to respect a blade...but negative thinking will hurt you too.
As Tuhon Gaje says- choose life.

So...
A) Chances are if there is intent behind the attack, you're fucked from the start- if you can fight, fight.
B) If you can run, run. If you can't, do your best to fight until you can flee or eliminate the threat.
C) Never say die.

"It's best not to fight back" is stupid. Beating feet is smart. Fighting back when cornered is smart. Letting somebody stab you is beyond retarded.
