Juji-gatame and ude-garami is what I use just as ... armlock or shoulderlock.
I'm more of a BJJ guy than a judo guy (and I like throwing people more can you believe it?).
So when I say stuff like Ude-Garami with the legs, I hope people get the general idea, I suppose I could look everything up in my syllabus though but thats time consuming.

as I mentioned before, when you underhook the far side I find I am less likely to get a submission then if I wrap the head. The way I look at it is if I have the head wrapped I can focus on control and the near side arm. With the underhook you have to attack both arms for success while maintaining control.
The key here, which helps with both control and submissions is to lower your head, so that your forehead is almost touching their chin. and you want your head on the side of their head closest to the far side underhook (sorta bad description. You want your head between the underhook and their head.
This greatly limits their escapes and sets up the submissions. Because you have the underhook they cant escape out and take your back. Your controlling the near side arm, and have afirm base so it will be difficult for them to roll you, especially as they will have difficulty using their far side arm (that you've underhooked) to assist in the roll.
Their last escape is to push on your face and create space that way. Heres where the head comes in. When they push on your head to create space you simply have to resist with your head, which is rather easy because when your head is that close their arm gets stuck in a cramped position with very little power. This is when your arm, that is controlling their near side arm, comes across and smashes the wrist to the mat. You've already got the underhook so then you transition to the standard Ude-Garami (its right in this situation too lol). and then finish from there.
