Well, I would imagine that for blind students you want to focus on sensitivity drills: feeling your opponent's position and motion from a single point of contact. Grappling should be do-able. They also have the advantage of still being able to hear you.
I would also imagine that teaching deaf students, after you learn sign language, would not be too hard. Humans are primarily vision oriented anyway, so all your demonstrations would still be useful there. Though they wouldn't be able to hear the round timer...
