For the wrestlers out there, what do you do about hand-fighting?

Some folks like to keep their hands free to throw a hand into the face to set up a takedown or to headsnap or something and others like to tie up the opponent's hands to establish a reaction from which they can initiate offense. Of course, if you are looking to throw, shoot from a tie-up then you will have yet another approach.

What's your preference?

And for the non-wrestling crowd, what do you think and how had what you study informed that approach?
