A friend of mine taught me how to make chicken last three days for a family. Economical and delicious! Bake a chicken with a bunch of veggies inside it (onion, carrot, celery, garlic maybe) and sprinkle with salt, pepper, whatever herbs you use, maybe garlic powder on the outside). Cook for an hour or til the juices run clean, take out the veggies. In the meantime boil the neck with the same veggies and keep the broth. Make a gravy with water and flour and cooking juices. Serve with veggies and mashed potatoes. Next day, eat chicken with black beans and cumin, garlic powder, salsa and tortillas, cheese, guacamole, whatever you want, and a salad. Then finally you can add the chicken skeleton on the third day to the broth you saved, again with the same veggies and seasoning and 3 cups of water added.

I know its not the healthiest, but Fried Chicken can;t be beat.. nothing like some Fried chicken with corn and mashed potatoes...

A variation or two;
Wrap a chicken breast in tin foil, and drop that in boiling water for about fifteen to twenty minutes (depending on size of peice). You keep ALL the flavour, and what little fat there is in the breast you can drain off. Baking; Try 'Nando's' marinade if you can find it. Chop the chicken breast into inch to to two inch peices. Marinade that overnight in Nando's marinade, or perhaps a combination of your favourite herbs and condiments. Then get your oven up to it's highest heat. Put the chicken on top of baking foil in/on a baking sheet or shallow oven proof dish with space in between each peice. Give it 15-25 minutes, depending on the kind of oven you have (convection ovens cook quicker), turning halfway through, and draining off excess fluids at that point. Barbecue is good to. There's not really an 'inhealthy way to cook chicken, unless you perhaps boil it in butter. The chicken should be just browning, blackening on the edges/corners. |
