They are done to show martial prowess through "trial by ordeal". Those savvy to the trick are masterful, those who aren't get burned. That simple. Plus, burns from fat and oil tend to have pretty good treatments in southeast asian ethnomedical modalities. I remember a cook at my parent's Thai restaurant accidentily thrusting his arm up to the elbow into a fryer when I was a child. He immediatly doused it with fish sauce and after applying some sort of balm he got from the local Buddhist monestary, he was pretty much 100% back to normal. |

The trick is a fluid that's heavier than oil at the bottom of the kettle boils at a low temp. Lets see the same trick with oil near the flashpoint 450 degrees! ![]() Talk about extra crispy...
