Its all easier said than done, and it all takes practice, but if you have options.
attacking their hook with your elbow (as already said by Peopleschamp) is a good idea, it hurts them and allows you to still be able to strike with either hand. Plus its a pretty natural reaction. If you do have to duck, attack at the same time. Imagine they are throwing a right hook. when you duck, turn sideways and put your left leg behind their right leg. (their right leg will move forward to allow them to throw the right hook) All you have to do now is put your center through theirs (basically stand up) and the other guy will fall over your leg. I wouldnt just duck, just for the sake of ducking, there has to be an attack involved. Attack at every chance.
