Quotes do take on new meaning and contexts. As when "mouse" took on a new meaning with the advent of the computer (context). Or "baptism of fire," "struck-out," "got to first base," "it was a wash-out," "robbing Peter to pay Paul," hundreds of others and the twist Lee himself gave to his quote lifting. What did the word "gay" mean in the 1920's? What did "drop a dime" mean then, as compared to it's meaning in the later drug culture of the 60s and 70s? I do rely on the immediate context. Even the name "Jeet Kune Do" must now be "qualified" with the question, "Original," "Concepts," "Hybrid," "LA," Oakland," adinfinitum..

Those arent quotes, they are phrases. Hasnt really got anything to do with it. Regardless, what you are doing is the same as misusing the phrases you have listed, for example you cant say that gay means "happy homosexuals" because it doesnt though you could easily think that if you read both interpretations of it. Thats what you are doing.

You cant quote one man and then take it to mean something different.

There is a huge difference between that, which is formally accepted, and you making it up as you go along and essentially misquoting/misinterpreting what someone else said.
