Default Holding a legal fight

I dont know who would know this but i cant find anything on it. How do the fighting leagues like UFC, Pride, and all the karate federations and things like that legally hold the fights that they do? How would in theory a person do this himself? I cant find shit on this subject but ive always wondered and dont know who to ask or where to look on what is needed or has to be done to hold a fight.
If anyone has info on this, the rules, contracts needed, all the legal junk and whatever or knows who does, please let me know. thnx. -AL

Why hold it legaly ?

My friends just throw together a full contact tourney every now and then. Unless you plan on having it in an official building with a large audience I doubt it would matter.
