Well, if you just meet them weight for weight they will just tire you with their mass and then you will lose any advantage of mobility. However, if you make a show of meeting them head-on in a collar tie or the like, many bigger guys will overcommit and you can set them up for a completely demoralizing throw.
Nothing like throwing someone 100 + lbs. heavier than you to totally humiliate them.
You can try to work arm-drags and the like and try to take the corner on them where you can work a takedown without their weight being so much a factor. Also, don't be afraid to take a shot! A lot of folks are terrified about getting caught under a bigger guy, but if you can finish quickly (it'll take a bit of extra effort, but...) you can put him on the mat before he has a chance to use his obvious advantage. Be prepared to switch off and move outside at angles of course.
The bad news is that if these bigger guys are as good as you, you are pretty much screwed no matter how you slice it. But, nothing ventured, nothing gained!
