EVERY BJJ, Muay Thai, and even MMA person who gives a public demonstration does so with a cooperative partner and choreographed routines. If you're talking about exhibitions that's different, but demonstrations are just that. No one will know what the hell you're doing if you just go in and fight sloppy. It looks coarse, unprofessional, and won't hold anyone's interest for very long.
Wake up and smell the business flowers.

Demos from ANY martial art are meant to show off the art in a slower, more understandable way to the uninformed public who they are for. You can still involve contact within demos, but if you want to sell your stuff it behooves you to make sure people can SEE what you're doing.

It's a very different experience doing demonstrations to Thais vs. Americans. The Americans want to see how you train but many in the crowd get turned off with the actual fighting. The Thais are just the opposite. They dont' care about training methods; they want to see you FIGHT. They especially get excited when they hear the clack of shins on somebody's leg or the ooomph from the guy after he gets hit with a good knee in the stomach. And a good elbow shot will cause the crowd to roar in encouragement.

I think demos are an easy way to show off in public. I have gone to tournaments and watched these demos where people do a flip kick through two boards and land gracefully. I am impressed with the acrobatics because I have no abilithow this represents a martial arts ability to defend itself. I also think that some people may look at that and think if the Join the class they can do the same thing. This will be a doubtful event unless the person spends many hours learning to flip over there own head and the learn to kick through a board or two.

Exactly, that's all demo's do is say "look what we can do so if you train with us you can do it too" (ok - admited you dont tell them it takes years of training) but anybody with sense will understand this.

On top of that demos are a form of entertainment, at least that's how the public looks at it, they aren't watching to be convinced to join some might be but a lot of time they want to see a flashy demo
Using a steel knife instead of wood, doing your forms in such a way that the Kiai(yell) is done when you are right in front of the public, breaking stuff and the list goes on.
But because other MA will also be watching it needs to be convincing and correct, you can fool the layman but not other MA

I had to improvise a couple of times when I performed a form I wasn't to familiar with but most of the public didn't notice only those also doing the art (bo and sai forms)

Entertainment! That’s all. All demonstrations prove is what the demonstrator can do to his willing cooperative partner. Not what some average practitioner of that MA can do to an unwilling uncooperative opponent...
