I thought the champion went a little too easy on Jason in the end...especially compared to fighter at the end of the Kali/Escrima episode.

he went very easy. That's not how they fight in lumpinee. he didn't even try to knee jason. it was mostly kickbox sparring.

That's a good show, but a lot of times the champions do go easy on them. It's impossible to learn a fighting style in the time they take, so I guess it's to make it somewhat competitive.
