I've wondered, how long does it take to go from rank to rank in judo?

I think it varies from one school to another. There are some real good schools out there and there are some McDojo level Judo schools out there. For example, I've seen a black belt in Judo get tapped by a 2 stripe white belt 4 times in 5 minutes before. Some places will give you a black belt in as little as two years.
