Hey I have a question is it disrespectful or in bad taste to ask an instructor where he learned martial arts from?

No you better ask, it's a good way to know the person. Hey your paying him good money so you want to know where he learned is technic. Would you employ someone whitout asking him where he learn to do the work?

Yeah. You're paying him - you are the employer. Just bring it up casually - if you go flat out and say, "so why do you think you can teach?" he/she just might get offended.
