This one is called 三杯雞!
that's san-bei-ji. It means three cups of chicken.
Ingredients
1 small chicken, cleaned and chopped into thin slices
6 cloves garlic, crushed
9 slices ginger
1/2 tablespoon black pepper
1 cup sesame oil
1 cup rice wine
1 cup soy sauce
4 stalks fresh basil (optional)
2-3 pieces star aniseed (optional)
Directions
1. Using a little of the sesame oil, brown the chicken in a clay pot or other hot pot
2. Add garlic and ginger towards the end of the browning.
3. Add the rest of the sesame oil, rice wine, soy sauce and black pepper. Bring to a boil. Add star aniseed into broth.
4. Cover and simmer for 20 minutes
5. Add the basil, stalks and all, a couple minutes before cooking is done.
** You want to eat this one with plenty of rice and some green veges as its a little salty and somewhat pungent.Last edited by Tom Yum; 01-19-2007, 07:19 PM.

How long do you put lamb shish kebabs in the oven if you don't have a grill? About two pounds of lamb in small cubes and I want them medium rare...
I made a marinade with olive oil, red wine, red vinegar, garlic, oregano, rosemary, salt and pepper and I'm going to add onion and tomato to the skewers. YUM!
