how do you define those muscles on the sides of your abs?

I assume you are talking about the obliques. The best way to target them is to do side bends. You can also work them by incorporationg twists into your crunches. Don't count on any exercise other than cardio to remove fat from this area. There is no such thing as spot reduction.

Twisting Crunches ( weighted or not )
Incline Twisting Crunches ( weighted or not )
45° Side Bend ( weighted or not )
      Side Bend

      Plyometric exercises can be:

Broomstick Twists ( if you have no partner )
Medicine Ball Twists ( seated or not )

Those are just weighted exercises. You need to do aerobic workouts. I'd just run more.

You not going to get abs if you have a normal-to-high body fat percentage. You need to lower your total body fat percentage and the exercises posted will help with that. You cant just get Abs to pop out. Its all about body fat percentage. Daddy_cool never said you have to loose weight, but you do have to lose fat.

            roman chair with medicine ball.

When you get up, toss the ball at a partner, have them toss it, and fall back.
            repeat.

also, side bends with dumbells/kettle bells.

            partner twists with medicine ball.

dancing ab routines. (no kidding, flex your abs, and try and move your rib cage seperate from your waist and hips in a circular motion, repeat in all driections.)

            dynamic flexion.
