What about the idea that if you control the amount of force, as an expert martial artist should be able to do (never mind the adrenaline dump), you give the scum a chance to try it again on someone else in the future. These people don't think "Gee, he coulda killed me but chose not to." What they think is "What a wimp! He tried killing me and he couldn't"

True. There's not much honor in self-defense, but it depends on the situation.
Your buddy gets drunk, looses control and swings at you - you use self-control when you hit him back and minimize damage.
When there's more of an unknown element, you pull out all stops. You don't stop until you have a chance to run or until the assailant stops moving.
As a drill, try sparring against 2 or 3 guys simultaneously; atleast one of the guys has to be bigger than you. You notice that you are more resilient, but when you go down you go down quick

So I'm thinking, "Gee, why are these guys being so mean? Did something happen in their childhood to turn them bad? After all, they were somebody's baby once. And if I take it easy on them they may see the error of their ways and never do this again in the future to some other person...some other person who may not have any way whatsoever of defending themselves... like my 76 yr. old mother, or my 11 year old niece. Yes! I can redeem them and convert them by showing kindness."
No, this guy doesn't deserve a light sentence. He deserves a thorough investigation to determine that the series of events is as he and his witness purport them to be, then he deserves a medal for making this a better, safer place for us all to live in, and finally, he deserves for the police to keep a protective eye on him to prevent any retaliation from the friends, family, etc. of the vermin he so kindly disposed of for us.
As far as the Kung Fu guy who whooped on the four armed guys, he should get some kind of freaking award. LOL, he should get "Hard Ass of the Year Award". He's awesome.

While on the excessive force subject, I read in this months BB mag that a 20 yr old is facing murder charges for killing an 18 year old with a spin kick to the head. According to witnesses, the 18 yr old was trying to pick a fight with the MA, the MA backed off and landed the kick when he was attacked. I'll see if I can find the article on the net.
