I may be moving to the Jacksonville, Florida area. Looking for a school that offers complete training.
Has curriculum with Muay Thai and BJJ or Vale Tudo/Shooto/MMA and Filipino weapons. If there was an SBG there that would be cool, but I think there isn't one there.

Just want a cool place to train.

There are several places that you can visit. I recommend Peacocks martial arts academy, they teach BJJ, Muay Thai, JKD, & FMA. There is also the "Five Star Martial Arts Academy", they teach BJJ, Boxing, and Kickboxing (I believe, haven't been there in a long time.)
