My friend was a wing chun guy and we used to spar all the time. I can offer this. Understand wing chuns strength which is centerline control, they do it well. They deliever alot of fast punches and are smooth but they lack the force of boxing punches but they can definitely knock you back or off balance or frustrate you. When moving in especially for the clinch, which is moving into their centerline vortex, use some low line knees to upset their balance, use knees from every angle also use the elbows. My friend was a bit hard to clinch but once I got used to how to navigate in and do damage then pull out it worked. Use the push kick, low into the mid thigh, since it will be frustrating, use the leg kicks with fakes and feints to throw him off. The wing chun elbows, knees, kicks and what they have as a hook is not as powerful as the muay thai arsenal.
I was successful with a cross, lead hook and rear leg kick alot.
I would say play your game, pick your shots, use set ups from all ranges, high to low, when you get your shots make them count with the muay thai power and speed.
Use the clinch tactics wisely and efficiently be wary if your clinch is not up to snuff and the wing chun guy has alot of experience. That misbalance might make you overconfident on the inside and you might have to pay for that.
Try to make him advance and close then hammer him each time the counterattack off of that.
The more calm and frustrating you can be to him, the more power will come to you since he will feel like his techs just arent hurting you or doing any good.
IF this is not a FRIENDLY match, then use caution. They will use finger jabs and thumb hooks, so your elbows should go for eye sockets, throat, temple, etc as well as kicks and hard direct knees into the groin. You answer something like that in kind.((Also there is where alot of old school bare knuckle tactics even the field because on the top the toe in kicks, finger pokes, hair pulling, stomps, trips, forearms, palm strikes, slaps etc really work well in this type of situation and really why the old stuff is great--not for the ring fighting but for adding to the fighting arsenal)).
But I advise a more humane hard sparring match instead of an all out street fight where someone could get really hurt.
