What are the exact rules to wear a mouthpiece ? Does it have to be a single or double one ? Or does it depend on the organisation you're fighting in ?

In my experience, the "rules" are simply that you have to wear one. What style of mouthpiece you wear is entirely up to you. I would suggest getting something along the lines of a Wipps or Shok Doctor -
get one from a dentist as those boil up ones are never the same, believe me when you wear a professionally made gumshield by a dentist (about $80) you'll never want anything else.
