The double doesn't seem like a good idea against a well thrown superman, you go low, and he's already in position to sprawl on you, with his feet already going back and out.
I think the reason you don't see it countered is that so far it's been used pretty well. Only one that comes to mind in recent memory is GSP's and he set his up very nicely, he already had Hughes banged up and worried about the kicks.
But ideally, I think the foot jab is the best way to stop it. If you have the time to see it and go for a double, you have enough time to lean back and throw a nice nasty teep against a very exposed, forward traveling midsection.

A few weeks ago, in an NHB/MMA match, I actually advised one of my fighters to throw the supreman after a leg kick feint. His opponent bit the feint, caught the right (superman punch) which stunned him and set him up for a series of lefts and rights and a couple of uppercuts that finally put his opponent on his back for the knock out.
Nine seconds in into the second round.
The actual setup had two stages.
#1 Jab, cross, right leg kick
#2 Jab, cross, feint right leg kick
My advice, if you recognized it as a superman punch then it wasn't setup properly and getting out of the way should be your primary concern.
The punch itself is not super powerful because the striker has no foundation from which to generate power. The effectiveness of the shot is based on its deceptiveness.
If you see it coming, but its too late to get out of the way, then cover up and prepare to clinch as your opponent moves towards you.

Not really a superman punch but kinda an offshoot,
If your fighting a guy and everytime you throw a leg kick he defends improperly by dropping his hand instead of raising his shin, eventually just feint the leg kick and throw a right cross, or in my experience hook, your already coming forward with the feint kick, so just plant that pivot, and bam right hook, works VERY well against more in experienced strikers.

Heh, we call it the Flying Ninja Punch, but anyway: If you can teep it go for it, but if it's been used well you won't have the time I would think. I'm for the parry counter personally. I think that the only reason it works, is because it's so fun and impressive looking, that nobody expects you to actually use the thing. It's only cropped up in the sparring here once or twice, and the recipiant always makes this great face-some kind of mix between enjoyment (that someone used the Flying Ninja Punch) and exaspiration (that they fell for it).

Makes you wonder if anybody bothers to train specifically against these techniques actually.

In all honesty, I think the best way to counter the superman punch is to just launch a Tiger Uppercut or a Haduken to their chest. Other than that, I second the Kryptonite kick.
