best thing to do is to only do a 50/50 ratio of Coconut Milk to Skim Milk.... Still get the flavor, but much less of the bad stuff.....

Penut sauce is soooooooo much worse...
you kind of have to work around it to really appreciate the artery hardening goodness and the fat producing properties of that stuff.
Order PANANG CURRY...if you're in the north, order khao soi for lunch...and of course...my favorites, chu chee pak (tamrind curry) gai...
nua sawan (thai beef jerkey...which can sometimes be scarry because it's sun dried)...
I don't know...if you like curries-> gang keow wan is a green curry that is high in coconut milk...gang deang is the red curry that is damn good, masaman is okay if you like cinnamonish and tumric type tastes more typical of inidan food... gang ba ma is would be some type of burmese curry...which I'd try to have if you could, because "authentic burmese" food would be harder to come by without risking a bullet going into myanmar.
If you like noodles... kee mao is KICK ASS...order it with steak.
Yum Nua is a steak salad...the shit is dank. Larb is also a favorite...that's the one you want to order like the sadists on here suggest...just keep some milk or half and half close to cut the capsicum (chili hot makelactose kill enzyme urrrrr).
Pad Thai is such a staple it would be like ordering spagetti in italy...it's played out...maybe some stir fry dishes???
Pad Ga Prow Sap I think is what Ajarn Chai always orders when he stops by...it's a Basil stir fry... Thai holy basil can have about as much snap as out of season thai chilis though, so be careful with that dish...which is also excellent...
Gra Tiem Tawt is garlic stir fry...
Try ordering catfish Pla Nung Khing...just DO IT!
Also...deserts are to die for... khao neow gati and the black version (dom) are great with mango and also a seasonal custard which I am quite partial to but don't know the name of...
avoid mekong whiskey and stock up on singha... also... krateng deang is red bull and SHARK or M-16 or Carabao all go MUCH better with vodka.

I love beer chang,Singha give me a headache after 1 bottle,also likeSaengsom and cola.
Dont like Durian(smells!) but love Saparot and Rambutan,oh i miss Thailand!.

Saying "Sap Sap, Khem khem" works for me. The restaurants here in the US rarely hit the target, at least the ones close to me. Lucky for me my wife is Thai.
Some of my favorites dishes are: (and I am going to use English phonetics since most people don't know the craziness that is Tinglish Ie K = G)
Kha Nah muu glorp (kale with crispy pork)
Pad gra prow (muu) (gai) (nuuah) Fried basil with pork, chicken, or beef
Gai phed maa muang Chicken and Chashew nuts
Yum wun sen glass noodles, can come with pork or shrimp
Muu pad prick Thai dam pork with black pepper
(muu) (nuuah) dat deeow (pork) or (beef) jerky
and some desserts
Taptim glorp sweetened water chestnuts in coconut milk with ice
Kow neeow bee-ahk black sticky rice with taro in coconut milk
these are but a bit of the iceberg. I have been back in the US for only 3 weeks and I am missing home like crazy. kittung Chiang Mai ba-hoy
